Olivier Bajard, champion du monde
Champion du monde des Métiers du Dessert, that is. Amazingly, this expert in chocolate and pastry confections chose a couple of years ago to locate his school-cum-shop just outside Perpignan. Lucky day for my tastebuds if not ma ligne. Below are photos taken the day we picked up some macarons and madeleines, our haul shown in the last pic. I also bought a croissant and a gooey, crunchy, lemony pastry (should have noted down the name), while Michael secretly bought one of the red balls filled with chocolates and a cookbook to go under our tree.
